They say that to truly understand a place, you have to sit at its table. On this tour, you won't just taste food: you'll discover stories, traditions, and flavors you won't find in any guidebook.
It all starts at 9:00 a.m. in my cafe, Nia Kapro, where I welcome you with a Zapotillo-style breakfast buffet: mild mote, warm sarandaja, artisanal goat cheese, local longaniza, and melt-in-your-mouth smoked cecina. I'll tell you why each dish has its own unique soul (buffet price not included, $8.00).
Afterwards, we walked to a small factory that produces products made with goat's milk. There you'll see how yogurt, custard, and cheese are made with ancient techniques and a lot of love. It's a place few travelers know about.
And just when you think you've seen it all... here's the final surprise: the "chivo al hueco" (lunch price not included, $8.00). I'll show you how this traditional delicacy is prepared, buried and slowly cooked underground. The lunch is hearty, full of flavor, and accompanied by anecdotes only shared in confidence.
The tour ends at 12:00 with a full belly and a happy heart.
